The tax covers co levels for type approved vehicles from 2001 onward so my interpretation is that no Ultima, even with say an LS7, will fall into that bracket for tax. It will be classed Private/light goods over 1549cc and be £180.
Even if a certain emissions level is set for SVA and MOT testing (based on the engine year) it will not affect the tax.
