When my car is fully warmed up my oil pressure seems to sit around 7 or 8 - not sure this is normal, can anyone advise?

At tickover I presume. A smidge low, but mine has been like this before. Might just be idle a bit low or the sensor being a bit out (they are all different).

What is the pressure at 3,000 rpm? It should go up quite smartly with some revs to at least 30psi at 3,000rpm (IIRC).

My understanding is that provided the reading increases as revs or engine load increases then there is not too much to worry about.

perhaps a dodgy oil sensor - from the handbook "for track days oil pressure should not fall below 35psi @2000rpm"
Mines about 15-20 @950 rpm when hot (on its second sensor which was replaced as it leaked)before that had similar low reading

oil pressure shoots up to 35-40 at 3lrpm so sounds like a dodgy sensor?

Electrical gauges tell lies, you need mechanical. As Shorts said if it rises on pedal pushing dont loose sleep.
