My girlfriend has just bought a 1997 Fiesta 1.25 Zetec and as the service history is uncertain to say the least I would like to change the oil. Two questions;

What oil would you recommend?
How much oil do they take?

Any help would be very much appreciated.

Get your self a gallon of good quality 5W30 semi synthetic oil, they need about 3.2 to 3.5 ltrs so you'll have plenty for topping up the level for the coming year.

I'd be tempted to take it to a Kwik Fit. Despite reputation they've always given good service to me, and only cost as much as the parts! Not only that but they let me have a look at the underside on the ramps and the bloke gave me a few pointers of things to watch on my ka too as he used to work in servicing at Dagenham motors. Saves having to dispose of the old oil too

just make shour you use 5w30 semi oil.
you cant realy go rong then. also i found that when i went to the local dump yesterday, that they had propa way of geting shot of old oil so it wasent all that much fuss.
Wile your there jack up each wheel at a time and make shour that theres not any silly amounts of play as you shake them side to side. Oh and when you do the back ones put a brick on the front wheels and let off the hand brake.

Good Luck
