Strange problem this. Recently I have been having problems with the engine cutting out, it has been happening more frequently recently. It usually happens within 5 minutes of setting off, engine just dies as I am driving along, after this has happened it is a real bugger to get it started again. When trying to restart after disabling the immobiliser I can't hear the fuel pump prime and it won't start (obviously) however if left alone for long enough the fuel pump will prime and it will start and run normally.

It has been at the dealers recently but typically they could not replicate these symptoms, so they changed the crank sensor which has not helped at all. I am thinking it is either the immobiliser playing up or possibly the fuel pump, what do you think?

You need to check whether the fuel pump is getting 12v during an 'episode'.

If you are, then it could be the pump, connections or a dodgy earth.

If you're not seeing 12v, start by checking the fuel pump fuse and relay for loose / dodgy connections to the fusebox.

It could be something as simple as a corroded terminal or sticky relay.
This is easy enough to eliminate - just swap the relay.

Next step is to check whether the relay is seeing its 12v feed from the module.
Check across pins 85 and 86 (on the fusebox terminals)- it should be 12v when the module tries to prime the pump.

If no 12v, the problem could be immobiliser-related at which point it's best to get a specialist / dealer to take over.

If you're getting 12v, and can hear the relay switching, but the pump isn't running, check the continuity from the pump fuse to pin 30 (or 87 - I can never remember).
If that's ok, you'll have to 'bell-out' the wire from the relay (pin 30/87 - whichever the above wasn't) to the pump as this might be broken somewhere.

Hope this helps and good luck - mine did the same as yours a couple of years back and it was the immobiliser!
