Standard rims on a Celica GT4 are 15", with 205/60/15 tyres.

Does anyone know whether they handle better with 16" or 17" wheels and a 50 or 40 series tyre?

Limited road use, mostly to be track day ..... Don't want to go too mad on size or width, but interested in any feedback.

Then you get onto which - Colway, Dunlop, Pirrelli, Toyo, Yokohama, Michelin etc ......

Ello,
If you go for a 16 inch tyrs, you'll need a 55 profile, and with 17 inches you'll need 50 profile. Its debatable which is best. Some people say that smaller alloys are better for acceleration, but you get less feel through them, and some peeps say bigger rims (thus lower profile), give you a better feel, but may effect the acceleration. I personally went for 16's on my tubby, because the 17's I usd to have did effect acceleration slightly, and I found that they tramlined a great deal more, so i went for 16's which seemed a good compromise. haven't had any problems with them anyway. As for tyres, I've only ever put falken, and Yokohama on mine. The Yokohama AVS sport were very sticky, but average in the wet, and the falkens were pretty good all round. If it was for trackdays, then I'd go with the Yokohama. Some peeps swear by others, such as F1's, or bridgestone SO-2's. So i think its all trial and error really...
Blah blah... god I rambled then :-/

My GT4 runs 215/50R16s, so I suspect you have the ST185.

I've always found Bridgestone Potenzas (spelling) to be pretty good. Not too noisy, fairly progressive, decent in the wet and they don't seem to burn out too soon.

Ask my boys over @ www.celica-club.co.uk for some more opinions. We don't bite.
