I'm getting a little worried by the amount of ignition timing I can add to the part-throttle areas of my Griff's ignition timing map.

Am I getting close to MBT? (There's very little chance of knock occuring before MBT here)

I know people say they can take bucket-loads of timing, but 40 degrees at 2000 RPM is a little silly in my book!

Sounds like it might be time to get it on a hub dyno chap, or a good rolling road, look for somewhere thats got lots of cooling air blasted over and under if possible.

From memory I was using about 38° at 20% throttle in that area

Did you get it through the MOT in th end?

Yes. No problems with MOTs now.

Dyno is planned, but I'm still waiting for some interior bits (like a 2nd seat!)

Not at all! I cheated and put a cat on, as I simply didn't have time to mess about with anything else, at least until I'd got a decent amount of mapping miles done.
