Fun training?

I'm looking for fun stuff to do on my (or someone elses) bike, the BMW offroad skills course is fully booked when I'm not offshore and I feel the need to do some training (hoon about in the countryside on something different).
Any offroad/speedway/stunt schools that come recommended? I live near Aberdeen so further North is a bonus, but I'll travel if needed.
