Get your thinking caps on guys

My 95 Chim is running around the 95-100 mark

Here what I've done...

Check for leaks
Fans sucking
Bled system
Changed Stat for 74 deg one (as per suggestion from David Geralds)
flushed rad
otter switch turns fans on at 90deg (and click in and out as they should)

it's not loosing collant....or oil...runs smoothly, no loss of power (goes like hell :-) and ticks over at a steady 1000rpm

the cars done 23k miles and has been serviced on the button....it had a new rad 2.5 years ago and all pipes are in good shape.

Any ideas as I'm all out

Cheers

Otter switch switching too late for me. Try swapping for a lower one

Have you checked the actual temperature?

To some extent you can use the stat/fans/gauge to corroborate each other, but ultimately you don't want to rely on any of them without confirming that they're accurate.

If its running at 95-100 and otter switch is working you would never see the fans turn off?

Have you checked the temps with an infra red thermometer? Are you saying the gauge reads 95-100 when you are toddling along in free air or when you come to a stop? Is your fanbelt working? are the manifolds superheated?...
