Perhaps someone like stealth? By custom what do you mean - size, offset, thickness, bolt pattern ...?

What's the motivation for the change? Perhaps there's another way to tackle things. With my Aprilia I found the back brake was next to useless, even after bleeding with the requisite wierd and wonderful technique. A quick chat with my regular supplier of after market bits and I found out the rear master could be swapped for a larger one which would bolt straight in. That improved things to the extent where at least it works properly at the lights.

I have a bespoke floating disc for my Brembo race caliper - but the design of the disk is RUBBISH - the bobbins are eating the carrier and I need to replace it for something that made to last!

I'd suggest you call Pro-Twins and see if they can help. They've always been very helpful on the phone to me and have involvement with racing. Perhaps they can get parts for your or point you to a supplier.

many many ducati specialists will have a remedy for this or try a race shop as they all had different discs/calipers for the track

or even trty people like harris performance etc.

they make bespoke parts.

wouldnt ask them to help on this matter as when it comes to technical matters - I think they are pretty useless!!!!

I bought the disc and carrier from the UK's (so-called) top Ducati specialist - they refuse to acknowledge that there is a problem - so who else (not Ducati related) would you recommend?
