How old is too old?

How long will oil and brake fluid last in an airtight container?
Is it safe to put 3 yr old oil in my P&J?
Should I dispose of any remaining brake fluid after topping up the reservoir?

if its an un opened bottle, it will be fine, if opened then resealed, I'd bin it, air carries moisture in it and brake fluid absords moisture.
