Mrs Tom500 used to run track days up at Palmer Sport for her clients. She works for sponsors of Williams F1 so they are very demanding and did a lot of reasearch and I know that Palmer Sport came out head and shoulders above the rest. Excellent car selection, excellent tuition, not overly limiting on revs etc. all round great set up.
Alternatively if you want to have a go in "real" racers then Topcats racing do what looks to be an ace package (though not had a go).
I'd be intersted to hear of other peoples suggestions as the market appeals to me too.

I did the Topcats Tuscan day three years ago and was more than pleased; proper race car, instructor who wanted you to go faster, learned loads during the day, well looked after by all the Topcats people - all-in-all an excellent day out.Gassing Station | Track Days | Top of Page | What's New | My Stuff
