Fixing This Blown Sky?

I'd just select the sky and fill it in with pale blue with very low opacity, then repeat it until you are happy with the colour. Or just paste the sky of your choice.
I don't think it looks too bad as it is though, apart from the flare.
I tried this and made a complete pigs foot of it. In truth I'm pretty crap at the whole Photoshop thing, so it's hardly surprising I messed it up

The flare is as a result of me shooting at midday. What is it they say about mad dogs and Englishmen?!

Perhaps not what you want to do but what about restoring some of the shadow in the roof and a different crop . . .

I'm sure somebody with plenty time and photoshop skills can do anything of course . . .

The photos don't appear to be working Fergus?

Not sure on the technical side, but that's a big chedi in the background! Bangkok?!?
Nearly
It's a temple in Lampang, Northern Thailand (about 600km's from BKK). My mother-in-law-to-be was ill in hospital, and the only time we didn't spend at the hospital was during meal time, hence shooting at midday and the resulting high contrast and blown out highlights.
Hopefully next time we go back I'll take my tripod along, and shoot at a better time of day
