Basically you are looking at some serious engineering which would include having a new set of front hubs made to match the Escort stub axles and bearings as well as the discs and of course the wheels you have got.
As for the back axle it would either require some properly modified half shafts or some type of adaptor which would somehow secure to the existing wheel studs (which of course is another way of doing the front hubs) and then allow for the correct PCD for the wheels.
This could if not done right be potentially dangerous.
Would the Shogun wheels have the correct off set to prevent them from interfering with the struts and rear arches?

Your best bet is probably to get some Shogun hubs, axles, suspension, chassis & bodywork- safer too...
Check out www.wellerwheels.com/ as they are due to restart production of 15" wheels soon. You'll find some smart wheels designed for offroad use at www.mjloffroad.co.uk/ as well.
Having messed about with different wheels for some time, my advice is to buy right first time and put safety first and cost second. Don't forget that the axle ratio may need to be changed as well. It all depends on what you want to use the car for and how good you are at changing clutches- usually the first casualty of a too-high diff ratio.

Just remembered that the 15" wheels from the current range of Peugeots (307, 406) do fit the Escort hubs. I used a 307 spare once on the rear of my black 1600.
Try before you buy as the negative offset (because they're for FWD cars) may mean you need spacers on the front at least to clear the struts.
Also check the angle of the chamfer on the nuts you use- they may not match exactly either.
