Ok, so the laminate on my dash has split all over the place and is peeling away, so time to do something new. I quite like the look where people have peeled/scraped off the wood and then just polished the metal carrier. But I've noticed the back of my dash is rusty where the metal is exposed and I dont want to polish the front just to have it rust over ! What would be the recommended coating , I assume some kind of spray on clear laquer might do the trick ?

My dash is gonna be coming out this morning; the veneer is coming away from the panel so I'll be recovering that with a sheet of 3M carbon Fibre (looks better on a black car with grey interior). I did some trials with acrylic lacquers and got good results: it's crystal clear, non-fading and polishes down well to leave a glass-like finish. It's a 'Hycote' I've opted for; time will tell if it endures.

I'd be surprised if what you've seen is someone removing the veneer and polishing the mild steel. More likely it's been replaced with aluminium or stainless steel.

Thats a picture of my spare dash coated with aluminised weave. Cheap & easy to do and available in different carbon & kevlar weaves as well as colours. tried c/f first but it didn't work with my interior.
