Paperweight? I don't see why. Its the right casting, so I'm sure it'll work just fine. As for the lower opening temperature, then its probably unlikely to be a bad thing, though if your cooling system is in good shape, then it shouldn't really be necessary.

On an open road i guess your temperature is gonna be stuck around the 79 mark which can't be good.

If you car runs warm in traffic, then can't see why a thermostat that opens sooner will help. Surely a car that runs at say getting on for 100degree in traffic with the 85degree thermo, is STILL surely going to run at 100 even with a lower thermo, no? Both thermo's will be wide open trying to let as much cool water back in, it's the rad and general cooling abilities that will dictate how cool it can get. A lower set thermo WILL however limit the top temp achievable in cool weather, when I would rather it let the engine get upto the temp it ideally needs.

Yup exactly, overheats are due to blocked rads, lack of coolant flow, localised boiling due to trapped air or lack of airflow through the rad when required.

A cooler stat will just cause your car to run cooler when driving normally. Which you don't really want.
