Do you guys run one or two PCV valves? I have fitted one to one rocker cover and then into the carb vacuum, the other cover just has the standard take off hose which runs into the air filter housing. Would two (both into the carb vacuum) be better?

The one PCV has reduced messy oil loss more or less totally.

If it is working then leave as is.

I have both covers piped to the catch tank then the catch tank is fitted with the PCV connected to the carb base. There is no connection to atmosphere.

Sounds like how it should be plumbed in to me. If its working, leave it alone.

This is how it should be. Normally you would have a restricted air inlet into one rocker bank and then you'd have an exit via a pcv valve on the other bank, going to the intake manifold under the throttle blades. Done this way the crankcase would be in vacuum some of the time, you'd get air flowing through the crankcase and being drawn into the manifold. Less oil leaks and less explosive fumes in the crankcase.
