Ideas for 2 week holiday

Looking for some inspiration for my holiday this year, Budget is going to be around £2000p/p give or take a few pounds. Im looking for 5 * hotel (Nice pool area ideally i.e not standard rectangle pool) but also looking for prom to be within walking distance with nice beach front bars where I can enjoy some nice quiet drinks with the Lady.
Would love recommendations of places you have been if poss.

Depends on what time of year you want to go:-
Dec/Jan/Feb - Thailand (Krabi province is gorgeous*, Koh Samui isn't as picture-postcard but isn't bad, Phi Phi is quiet but VERY pretty. Phuket more touristy.), or Malaysia (Langkawi is supposed to be really special). Anywhere in that area though - Vietnam is up-and-coming as a destination now, and the people in the south are pretty friendly. In fact, the people are one of the highlights of that area - hospitable and friendly. Although the more touristy areas are now starting to get a few traders who won't take no for an answer (nothing like Sharm-el-Sheikh, but a bit more attitude and side than we found when we were first there a few years ago). So not-in-the-brochure, 'new' resorts are the way to go if you want quiet and authentic...
Book now for Xmas and you'll be looking at c. £500pp for flights and £50-100pppn for accomodation depending on whether you want good 4* or stunning 5*. Eating out is cheap though - outside of the resorts in Ao Nang (Krabi) we were spending c.£10-12pp for fresh seafood and a couple of drinks each.
Otherwise I've not been to the right sort of places, IYSWIM.
