just a bit of advice for track day newcomers.....

One of the key things to remember when preparing a track car to exceed your expectations is stripping it of excess weight - I have had a couple of so called stripped cars, a Nissan Primera EGT which was fantastic and currently an old E28 M535 which is good fun but scary !
Its a matter of pride that I have managed to take an extra 10-20kg from each.
Laborious, but a hammer and chisel can remove a surprising amount of sound deadening.
What I can say is that after a number of trackdays at Oulton park I have yet to see a Fiesta, Nova,escort etc 'embaress' a GT3

I like the sound of your Fiesta...but newcomers dont even need to go that far.
The key to cheap trackday cars is reliability, so finding a fairly clean example of your chosen car is a good idea.
Other than that the only other prep I would give my first car would be to just stick some new, decent tyres on it and give it a full service (inc timing belt and waterpump if the history is a bit sketchy) and get it up on a hoist to have a thorough check of the brakes and suspension.
A car with fresh suspension bushes and a set of high end road tyres (Toyo T1R is a good tyre) will have limits higher than most novices can push.
