Bear in mind my girlfriend is vegan....

What oil in your opinion produces the best chips...

I've heard ground nut oil if very good for frying chips in, not tried it myself though so dont know whether its true or not.

Groundnut oil is good because it has a very high smoke point, and therefore can be got good and hot.

Beef dripping is best, but if the vegan missus finds out, bedroom privileges will be suspended.

A tip for making world-class chips is to parboil them before deep-frying.

Beef dripping, no question about it. A load of us at work had a fish and chip takeaway lunch from Tom's Place (SW3)... 12 quid for gurnard and chips? yikes Gurnard being a fish that lives at the bottom of the sea and eats st! hurl

However be that as it may, the chips were damned tasty. They're cooked in beef fat and a life-long vegetarian colleague remarked on just how good they were. Maybe some things are best left unsaid... biggrin

Its difficult to hide the solid fat (though it does taste best IMO) but I would go with the boil first for about 10 minutes and then fry in very hot ground nut oil. It does not get absorbed much by the chips and doesn't taint the flavour of the potato.
