Onion, cheese, chorizo and pancetta tart.

Made this yesterday, haven't eaten it yet but it smells delicious, thought I would share.
Ingredients
1 pack of ready rolled shortcrust pastry (Easier to buy than faffing about)
1 red onion
1 white onion
2 3'' chorizos
2 garlic cloves, peeled and crushed
2 eggs
1 egg yolk
300 ml double cream
2 tbsp dijon mustard
6 oz grated Cheddar cheese
7 slices of pancetta
salt and pepper
Method
1. Roll out pastry to fit a 9 inch round flat tin and bake blind.
2. Heat some oil in a frying pan and fry the sliced onions and garlic for one minute, add the chorizo and fry for about 5 mins.
3.Preheat the oven to 180degs, put the grated cheese in a bowl and add the eggs, egg yolk, cream, mustard and seasoning. Beat together.
4. Add the fried stuff to the mixture and pour into the tart case, bake for 20 mins. Lay the pancetta slices on top and bake for a further 20 mins or until the filling is set but not too firm and the pancetta is not burnt.
