The SBC is a double-edged sword: it has been around a long time, so parts are easy to come by. There has been a lot of R & D put into it, so there are a lot of available options. However, it is a bit of a dated engine.

I love the sound of a high revving engine, such as a BMW V12. I know someone put this into an Ultima already, although I haven't heard a whole lot about it. How does it sound? How is the performance? Is this route more cost/effort prohibitive than it's worth?

I also saw a dual engine Hyabusa setup. That certainly sounds like a lot of work! Again, I haven't heard much about real performance numbers.

What other engines have been dropped into an Ultima, and what was the effort and result?

The BMW V12 is not a high reving engine as std and is expensive to get 500bhp in NA form.... turbochargeing it is a different story and that is the route I am going as with almost no mods it can do over 600bhp in TT guise.... Personnelly I'd not put any twin turbo unit in an Ultima due to the cooling but it has been done.

A better option IMO is the relativelly modern Audi V8 that is high reving and produces more power as std.... but the best option of all IMO is the LS1 or LS7.
