Probably a silly question (it being a government agency) but can you book a theory test for a saturday or is it weekdays only? And is it only available at the regional centres, ie miles from where I work (meaning taking half a day off)?

I have looked at that. Which answers the location question. But not if they work on saturday. The booking section requires a driver number on the first page before you even get to availibility!

Your driver number is on your provisional/driving license, on the next screen you can check available dates without having to hand over any bank card details. I seem to remember my local test center had Saturday slots.
