I'm pretty sure that the manifold is the same on all (non-VHPD at least) K-series S2s so I suppose any exhaust will fit. Apparently the 111S needs some back pressure to operate properly though, so you need to keep the cat.
Sports exhausts make the 111S much more draining on the motorway because you lose the advantage of the valve controlled exhaust port which cuts the noise levels down at low revs (I'm actually thinking of switching mine back to a standard setup).

I didn't, it was on the car when I bought it. I can try and find out what make it is though if you like.
It sounds alright above about 4500rpm but it's far too loud at lower revs with minor throttle opening which, as it's my only car, is annoying.

I just fitted a new exhaust to my 2003, 111s. In two minds about it though - 4500revs and above sounds awesome! However... I'm driving around on motorways a lot
- and at 3500-4000revs, without the special valve mentioned above its much noiser, not sure i'm gonna be able to live with it!
Any exhaust will work as long as it states its for the rover engine.
