Few days away from Herts

Hi, me and a friend are planning a few days away from West Herts in August and we are not entirely sure where is best. Ideally we would need-

-Available Campsites
-Maybe some civilisation, towns etc. for a day just to relax
-Around 2 hours max drive away (We plan to take on Wales and Scotland at some point next year, but could do with saving fuel money this time round)
-Possibly some nice scenery to relax
-A fair amount of decent A/B roads or lanes

So far I have thought of heading towards Norfolk/Suffolk as I seem to remember these areas having some good roads and tick all the other boxes. I would be grateful for any other suggestions, we are a bit clueless of the south east as both of our driving lives have been spent elsewhere at Uni. Many thanks
