Near impossible to get cap heads to work, the allen key would foul on the manifolds frown
IIRC they're 3/8UNC The choices are stick with the 14mm hex heads or ARP do some with 10mm hex's on that are a bit easier to work with.

Personally I would stay the heck away from stainless because aluminium/stainless is a bad combination, and because stainless tends to be brittle and vulnerable to snapping. Cap heads can also be problematic because they won't take much torque compared to an ordinary hex head.

ARP do some very nice K-head bolts which have smaller heads and make access a lot easier and if you're replacing the bolts that's what I'd recommend. Also get a fine ratchet ring spanner, makes this job a lot quicker and easier rather than trying to get half a flat at a time with open enders.
