Starting out in photography as a hobby

I'd like to learn how to take amazing photographs and videos. So much in life seems to pass by with no record of it, and it would be great to start a bit of a portfolio.
I also want to take my own publicity shots for my business. Pictures of staff, offices, cars... that sort of thing but to get it all looking amazing.
What sort of equipment do I need to start? I presume I'll need a digital camera, and I'm going out to get a macbook later this week that I will be able to run my copy of photoshop on.
What should I look for when choosing a camera?
Any good photoshop tutorials around? I've played with it a bit but I find it very cumbersome to use Everyone else manages so it must just be me
