Long story short - I may need to replace one of my V5 owner documents. I'm in the States, and do not have access to the address the bike is registered at. Is there anything I can do from here, such as change of address and re-order to new address?
TIA
Bit of a longshot here... but have you thought about calling the DVLA on Monday...?TIA
As they issue the things, I would guess that they would probably have the answer for you.

If you mean you've lost the V5, you apply for a new one with a ? form from the Post Office, inserting the new address.
DVLA write to you at the old address in case it might be a fraudulent application.
If you don't reply from that address within a set time, they issue the new V5 to you at the new address.

And you pay the fee, £25 IIRC, unless you have the green "new keeper" supplement part of the V5 prior to you buying the car. DVLA write to you at the old address in case it might be a fraudulent application.

DVLA will only write to you if you are changing owner details as well as address. If you are just changing address they will just issue it. Call them if you wish the number is 0870 240 0010 but it's all on their website along with the form you can download.DVLA write to you at the old address in case it might be a fraudulent application.
