Newbie Yank Track Experience Help

My significant other and I will be taking our first trip to europe during the summer of 09 and I would like to take her to some form of trackday/ track 'experience'. Cars must be available to rent/use as we will be taking public transportation everywhere. Can any of you point me in the direction of any companies that operate such days at tracks in mainland europe? I'm sure that Britain offers the widest selection, but since London is so absurdly overpriced, we are most likely not even going to visit the country. Spa would be the ideal location. Any help is GREATLY appreciated as this is something that I have been looking forward to for a very long time and want to get my significant other feeling the sports car buzz a little so she wont be so upset when I want to spend a little too much on my cars.
