I'm in the market for a SEiW, but was wondering how much prices fluctuated throughout the year? Obviously individual cars/sellers vary, but generally if a car that's worth £8k in the summer, what's it worth in the winter?

How many times more cars are sold from May-August than December-March?

My reasoning is I've got about £6k-£7k to spend and want a SEiW with a 4cyl 16v engine or bike engine and generally both are out of my price range in the summer.

if you go to the www.wscc.co.uk site and in the classifieds is a seiw with an 1800cc Zetec for £6.5.Be quick as the cars do move quicker now than the winter.I bought a car in June(not the best month as everyone wants one) and was first out of 62 people and I had to travel nearly 300miles to get it.If you do want one,best to get the wonga ready,in cash for bartering a little and be prepared to travel.A good car will have people queing round the block.
I don't believe that the prices drop particulary,just that instead of 60 people wanting a good car it will be 30,but you still have to be no.1 with the cash and all sorted.

That's just the car I had in mind and have spoken to the vendor about it, but I'm moving house next weekend and although my finances seem sorted, I think I'd be silly not wait a month. It's tempting though as it's just what I'm looking for and the price seems fair.

If you can wait a month or two, there should be plenty around. You probably won't get a pukka Megablade bike engine'd car for the budget you are looking at (usually nearer £9-£10k), but you might get an older SEIW thats been converted to bike engine for that kinda money. Alternatively there are plenty of nice car engine'd variants around, as you've already mentioned, and once autumn sets in, lots of people will be looking to free up garage space over the winter and sell their cars, and likewise there will be less people wanting to buy as most wouldnt want the car until the spring.
