Over exciteable pod readings and warnings

This refers to my 2002 Mk1 4L Tuscan.
Sometimes when I slow down to a top at a junction, lights etc. the pod tells me that oil pressure is 0 and sounds a warning. The oil pressure sensor has been changed and all connections cleaned up inbetween, it was ok for a bit, now it does it again. As soon as I'm rolling again it stops and starts being sensible.
When the water or oil temp gets to about 79C it starts to flip back and forth about an extra 30 or 40C, so 79/119 for instance. If I'm in traffic and crawling so the temperature is rising it gets even more exciteable and has told me the oil is 135C and the water temp 199C! (but still flipping back to what I assume it really is). The biggest problem is that when it thinks the world is ending it beeps at me which is very annoying. As soon as I get moving again and some ventilation cools things down to below about 79C it stops panicking and it's back to normal.
All the other readings are fine, it's oil pressure and temp and water temp that do this. The oil is fine by the way, I've had the car about 2 months and done around 1000 miles in which time it hasn't used a drop of oil (checked again yesterday).
It seems to me like the pod is over-reacting, is there a way to calm it down? Does it need replacing? I've searched the forum for answers but only come across one of these problems on its own, not all together, any pointers welcome - ta.
