Monte bianco- very autummy dessert from Italy
Get some chestnut purree in tins, mix up with a 50/50 mixture of cacao powder and icing sugar to make a firm mass- aromatize with brandy or rum of your choice, rum will taste stronger, put in dessert glasses to mike little "mountains" and cover with whipped double cream like a snowy peak (omit coming close scales the next morning, I hasten to add)

My version uses chestnut purre instead of the roasting business but feel free to do the whole thing- I would just omit the fennel because it does not fit in there and is not part of the original italian thing- good luck...

my favourite desert for a dinner party has to be a white chocolate pannacotta with a raspberry coulis.
easy to make, can be made a day in advance and looks well when presented right !
Oh, it does have one litre of double cream in it though !!

Its a bit time consuming due to all the freezing that has to happen - but this is the most amazing desert...
