Hello, a truly ignorant question but I have 3 lamb shanks (around 350g each) for dinner tomorrow and was wondering how exactly I cook them?

None of my limited range of books have anything and I'm not sure if I trust google to tell me how to do it!

Roast them, longer the better, I usually put them in a roasting tin covered with foil for a couple of hours then take the foil off and do for another15-20 mins. smile

could not find it frown

should lamb ever be pink when cooked ? went to a pub for a sunday lunch and had lamb shank, meat sort of fell off the bone. not sure if it was that or a dodgy beer that had me sitting on the bog for several sessions over a couple of hours, but not been back yet

might mention to the chef, but he a bit touchy about his food

Always IMO with decent cuts.

It's unlikely to be the meat (you don't say how it was cooked but generally shanks are slow roasted or braised.) Braised shanks often look pink even after a few hours in the oven.

ok cheers for the comment, it was a slow roast afaik, suspect it was the beer, but green king seem to like buying pubs and then not having any good beers in them

There is far better ale than Greene King. In my experience, many of their tied houses tend to have poor cellarmanship as well, resulting in a rather lacklustre pint. frown

there are 7 pubs in town and 4 of them are green king

local serves me snakebite by default as landlord knows me well but he is green king, other local is green king, but have in 2-3 guest beers, one around the corner is a free house and regulary changes the beers, most of which seem to be at 4%

suspect it was the beers as well smile
