Bought some Nestle condensed milk at the weekend with the intention of making some fudge. Looked on the back of the tin and there was a recipe for Millionaire's Shortbread so decided to make that instead.

Twas bloody lovely. It went down a storm at home and made a batch for my team at work. I used Cadbury's Dairy Milk for the top which was lovely.

Highly recommended if you have sweet tooth.

Word to the wise (well, three actually)...Banoffee merengue pie...

Sugar, smashed up digestives/hobnobs and melted butter for the base. Tin of condensed milk boiled unopenned for an hour and a bit and cooled, plus sliced banana, for the middle. Whipped egg whites, cornflour, vinegar and icing sugar for the top.

Particularly good with a big spoonful of mascarpone.

You are not supposed to boil the tin unopened but I have done it a hundred times without incident. Boiled (caramelised) condensed milk = lick

Has to be sweetened condensed milk, I tried it with the regular stuff and no amount of boiling would get it to caramalise.

If you haven't got time to boil, carnation now do it already done "Carnation Caramel" takes no time to whip up a batch thumbup

I do mine slightly different

Short crust pastry base, layer of toffee (boiled condensed milk), layer of sliced bananas, layer of whipped double cream, with a little coffe added to it. Then top with chocolate coffee beans lick

And even better the next day, when it's all soggy biggrin

as a keen user of condensed milk for bannoffee pie, you realise that you can buy it "pre-boiled" as such ... from Tesco, Sainsburys etc. Makes a bannoffee pie easy to do in 30 mins flat.

Will try the Millionaire's shortbread though, like most, my mum used to make it. It didn't last long ...

I discovered this too. Saves the 5 hours of boiling and many ruined pans!

May I also suggest crushed Maltesers sprinkled on top of the whipped cream yum
