I tried taking a shot of fast moving water recently on a slow shutter speed (2seconds). It was mid morning in decent light. The Picture turned out completely white. Im using a bridge camera and it only goes up to F8. Is this impossible or have I missed something. Could I try compensating the exposure? All C & C apprieciated.

Sounds overexposed. Try using aperture prioirity and go to f8, that'll give you the longest shutter speed possible without overexposing... might be worth trying a filter too such as an ND8 or perhaps a polarizer.

And turn your ISO down as slow as possible seeing as you're limited on how small you can get the aperture.

I'll put 10p on 'You set it to Manual Exposure'.

If so, you set the shutter speed to 2 secs but either forgot, or were unable, to set the appropriate aperture (min f8 could well be the problem) or ISO.

Too much light is getting in. If you can't juggle aperture or ISO, you'll either have to use a faster shutter speed or a ND (neutral density) filter to reduce the amount of light getting in.

...or go back at night instead smile

2 seconds is quite long though for a moving water shot - you should be able to blur water movement to an extent with (say) half a second so it might be worth trying that.
