Yesterday for lunch I made parsnip soup. Its quick easy and perfect for the cold weather...

Serves 2.

You will need.

4 large parsnips
1 Small Onion
2 Cloves of Garlic
3/4 Ltr Veg stock
glass of full fat milk or double cream
salt and pepper
Butter

Add butter to a saucepan, slice onion/Garlic and add to pan. Keep the heat low as we are not looking to colour the onion just soften them. Chop up parsnip and add them to the pan and cook on a low heat for approx 10 mins. Add veg stock, salt, pepper and simmer for a further 10 mins. Blitz the mixture with a blender add the milk and serve. I added a few parsnip crisps which I shallow fried in olive oil on top of the soup to add a bit of crunch.

As I have been getting into my soups on these cold days of late and I am a big fan of parsnip, I think I may have to give this one a go.

I had a variation which was parsnip and apple. Pretty similar to the above, but added celery and some herbs to the onion and garlic. The recipe was supposed to be white wine and stock, but I used cider, and added 1 cooking apple to 2 medium parsnips. Coupled with home made soda bread yum

Try adding a slug of balsamic vinegar (either mised in, or as a drizzle on the top) - works really well with parsnip, potato and sweet potato soups.

For parsnip I like to pop a drop of chilli oil on top too, for the full winter warmer effect.
