The std factory setup is consistent and effective. I remember reading Jay Esterers site and his "upgraded" brakes from an Indycar. It stopped slower than standard.
I think when upgrading brakes there is more to think about than just the rotor and caliper size, so if someone is selling an upgrade kit, then there should be some data to back up exactly what the upgrade is.
Jeff probably has some telemetry from his 200-0 runs so that would be a good starting point before you decide.

A bit of online research shows the Baer kits direct from Baer are pretty cheap, it's just you'll need Jeff's bells and some other bits to suit an Ultima.
Anyhow, get Jeff to quote and make your own decision.
