I love squid, its so easy to cook and delicious. I find it diesn't go rubbery if a) you cook it quickly, or b) cook it for a long time in a stew or paella. If you grill for too long or don't stew long enough it it too chewy.
The best squid dishes I've had in Spain (hence the use of chorizo below which gives the squid a great smoky flavour). There are loads of recipes online, but below are my favourites.
Suggestions are:
Quick chargrilled squid with chilli flakes & lemon juice
Squid stew - tomatoes, beans or chickpeas, chorizo, paprika, red wine
Or try:
Chorizo Stuffed squid - with chorizo, breadcrumbs and onion/garlic, then baked in a tomato sauce
