Check out Deliaonline, she does quite a good recipe for Turkey curry.
Personally I would normally shred any good meat off the carcass, set aside. Gently fry an onion then add curry powder, cumin and tomato puree to create a paste and then after a minute or two add a can of coconut milk. simmer through add the turkey meat with some garamasalla and job done!
If coconut milk is too rich, as an alternative you could use creme fraiche and add some water until you are happy with the consistency of your sauce.
