Butternut Squash
Discussion
It'll be interesting to see if anyone can come up with something. Soup is the best use for them, IMO, and I'm still not convinced I like them even then! I can only assume that their rather fashionable 'rise' is going to be followed by a 'what the hell were we thinking' hang-over.
Still, better than parsnips, I suppose.
i love butternut
either boiled/steamed until just tender. then add a bit of butter, salt and pepper.
or mashed with some butter, salt and pepper.
or made into a soup with some cumin and coriander, plus a few chillies.
or cut in half, drizzle with olive oil, a bit of garlic and some fresh sage. then mash the result and add right at the end of making a risotto. then toast some pine nuts and sprinkle them over the top.

Stir roasted 'bumnut squash' (as called by Zep child #1) into a decent risotto with goats cheese and fresh thyme.
Care to give a more detailed recipe? I'm happy to persevere with them; maybe I just haven't 'got it'.Not the parsnips, though. They are Satan's own vegetable.
This was on Indian Food Made Easy, and looked good. Been meaning to try it:
