Just roasted one in preperation for soup. But it tastes nice and not sure if I want to waste it on soup. Any other recommendations or recipes ?

Did you roast it plain?

Really nice with orange juice, and brown sugar sprinkled over it, and then roasted lick

And lovely made into soup, with sweetpotato....and some thai spices

Hmmm...is Tesco still open scratchchin

It'll be interesting to see if anyone can come up with something. Soup is the best use for them, IMO, and I'm still not convinced I like them even then! I can only assume that their rather fashionable 'rise' is going to be followed by a 'what the hell were we thinking' hang-over.

Still, better than parsnips, I suppose.

I have a recipe for a Butternut Squash & Chilli Risotto, which is rather nice. I'm at work at the moment so I could post it up later when I'm back at home, but if you know how to make risotto then you'll probably be able to make it without a recipe!

For the jury, I'd like to clarifiy, that I'll only eat the squash as it doesn't taste of squash, it taste of curry. smile

i love butternut

either boiled/steamed until just tender. then add a bit of butter, salt and pepper.

or mashed with some butter, salt and pepper.

or made into a soup with some cumin and coriander, plus a few chillies.

or cut in half, drizzle with olive oil, a bit of garlic and some fresh sage. then mash the result and add right at the end of making a risotto. then toast some pine nuts and sprinkle them over the top.

Indeed. Crispy almost bordering on burnt at the small ends. It's quite possibly what makes a roast dinner.

Stir roasted 'bumnut squash' (as called by Zep child #1) into a decent risotto with goats cheese and fresh thyme.

Care to give a more detailed recipe? I'm happy to persevere with them; maybe I just haven't 'got it'.

Not the parsnips, though. They are Satan's own vegetable.

Soup for me - with a couple of red peppers, some stock and blended till smooth. I have tried squash roasted, and while it wasn't bad, it certainly wasn't good, either.
