Decided to make some pickled onions for some bizarre. Found a load of online ste about them, but opted for my own recepie of ginger, garlic, chilli's and peppercorns. Cant wait to scoff the lot, c'mon clock go faster.

Anyone got any other hot recepies up their sleeves?

Grew some shallots in the summer, decided to pop them in some balsamic vinegar with some salt, sugar and a couple of bay leaves back in September.

Cracked them open over Christmas.

Bloody fantastic!

don't over salt, soaked one lot for the suggested 24 hours and they were terrible, another lot done for 6 hours were great.

Erm... it's completely the wrong time of year for pickling onions, isn't it?

Just about to start the marmelade season; Seville oranges bursting forth anytime now.

Just popped a couple of dashes of salt in the mixture with mine and just left them to it. I'm inclined to think that the more you faff about with 'em the less likely they are of being a success.

In the past week I've had 6 customers tell me that they're making marmalade.

And its completely the wrong time of the week to be discussing it...you lot should all be out getting drunk somewhere...which is exactly what I would be doing if I could move.

Oooh yes. Home-made pickled onions are great - provided you've got someone to spend the necessary hours peeling the little bds.
