Makes 1 litre.

meat stock (cubes, etc)
1 packet of koskenlaskija cheese - broken into pieces
dash of pepper
dash of salt
Reindeer (smoked) chopped into tiny pieces
blanched onion (medium)
2 tbl spoons corn flour



blanch onion
add meat stock
add corn flour to thicken (simmer for a few minutes)
add cheese and reindeer

Can you tell i have just come back from Finland and they love this stuff over there....

Not especially no! Nice?? Wonder if you can get reindeer over here, i like the sound of that!!

i wouldnt be worried about finding the reindeer, try finding Koskenlaskija (http://www.dlc.fi/~marian1/gourmet/i_finche.htm) in the UK and how will see a flaw. I use the cold smoked reindeer one, i suspect that if you are in London you may be able to try and get some from the Finnish church in Rotherhithe:

otherwise its a case of getting someone to bring it across and you wont find many finnish people wanting to do that without eating it themselves.
