I loved tinned sardines on toast! However, I cant help but think I'm missing a trick and could be doing something a little more adventurous with them. I've considered throwing them in with some pasta to make a light lunch snack etc. but was hoping to find something a little more substantial that uses them

Any ideas?

Agree with gavster - most supermarkets do them from springtime onwards - dirt cheap. Coat heavily in rocksalt and barbecue - very quick and very delicious.

Be sure not to have planned a 'cosy night in' as they do have a habit of 'repeating' on you, which can cause mild or significant embarassment depending on your demeanour.....

To be honest, I find the flavour of sardines comes out best when they are simply cooked - no grandeur or complication, just plain and simple. Try and fillet them if you can using the old pressing down on the spine technique - makes a much easier eat. Grill, fry or BBQ and eat with a tomato salad and a bit of lemon and olive oil. Tastes like summer cloud9 For substantial, just eat more.

A really easy and great way is to butterfly them, remove the backbone and take the remaining bones out, then you have 2 small fillets which are easily marinated in lemon, cayenne, garlic and then cooked on a griddle for 3-4 minutes, superb!

If using tinned, I would stick to mashing them on toast / bread, perhaps with Tabasco and a bit of mayo for spice, or mixed with creamed horseradish and chopped dill for more of a Scandinavian flavour.

Brush with a little garlic olive oil and bung them on the BBQ. Eat with handfuls of crispy French bread and a crisp white..
