I guess the apostrophe must cause a problem for the usual {member} {/member} tags.
Some of the guys might know a 'cleaner' work around but for now at least, the following works:
{url}tom's dad|http://www.pistonheads.com/gassing/profile.asp?h=0&memberId=33743&t=633706&f=9{/url}
So if you need to do this again in the future, instead of using the {member} tags... use the {url} tags as above. Remember to replace the curly brackets { and } with square brackets [ and ]. Curly brackets have only been used so that you can see the code that would otherwise be hidden.
With the normal square brackets you get:
tom's dad
