Tried Rattlesnake in the states, rather uninspiring but I've got a feeling that the way the Vietnamese do it will be a bit more, erm, rustic.

He was diagnosed with Parkinsons 11 years ago.

Enormously talented chap, has created a very good restaurant on the back of no classic culinary training at all, in fact he was an Architect.
