Anyone got any tips?

When I make it I just caramelise a pound or so of onions, add garlic, some tomato paste and beef stock. Served with garlic/melted cheese on bread.

I've been known to add a tot of brandy...

Had some at the weekend actually, made by friends. Had some balsamic vinegar in it I think.

Wine is a must. My other half (who happens to be a full on cheese eating surrender monkey) uses White, and chicken stock not beef. Different strokes though.

A big pot on the stove now... MMmmmmmmm

The whole house full of the aroma...

I used a couple of those new Knorr StockPot Jelly thingies... Very easy..



I'll let you know if there's a taste differnce.

I don't reckon garlic is a requirement to this soup. Let the onions do the talking (as well as wine, good stock and and seasoning of course).

You can of course rub garlic on the toasted crouton you float on the surface of the bowl with all that lovely gruyere cheese!

Man, I hate this forum, I'm hungry again!

Flavour was awesome, might have helped with a smidgen of Cognac in at the end...!

I found that the Stock thingy's left a bit of a slick on the surface, rather Oily.

Didn't detract from the flavour but aesthetically not brilliant.

sounds more like mine than the rest

fry onions well in butter til brownish, add balsamic and brown sugar and cook til evaporates, add stock, season and ... I think thats all actaully

Two things - if it's not made from strong beef stock, it's not French onion soup and the onions must be caramelised in beef dripping or the taste is ruined.

Try Morrisons own brand, big plastic pot of the stuff for about £dunno, the wife does the shopping, probably a couple of quid. Really good.

You appear to confuse your opinions with facts. The home of French Onion Soup is the Les Halles district where it is commonly made as described above in restaurants well known for the dish such as Au Pied de Cochon. If you like yours made differently, so be it.
