Homemade Burgers?

I've had a quick search but found no topics on homemade burgers, any tips?

I generally just use lean mince from the local butcher, add some red onion and salt and pepper and form in to burgers shapes, stick in the fridge for a few hours before eating. lick

thats pretty much it, though i add some breadcrumbs or whisked egg as a binder so i can cook straight away.

just play about with things, add spices etc. or put a slice of cheese in the centre. or try other meat - lamb & mint, pork & apple. all good on the bbq.

Egg and Breadcrumbs are a must, along with fried onion. Also try lamb mince with cumin, paprika and chopped fresh chillis burger

Good mince obviously
1 x packet french onion soup
1 x packet chicken noodle
1 x egg
Plain flour

Mix together thowing in things to taste such as parsley, chillis, garlic, etc.

Job's a good 'un.

I have a Burger Press.

No need for binding, provided the texture isn't too crumbly.

Load up with meat-mix, press hard - one burger pattie.

Did this after your last recommendation on the subject. Confirmed awesomeness.

Then last time, we took it a step further and formed the burgers around a little piece of mozzarella.

Try a good lug of Worcestershire Sauce, a handful of freshly grated Horseradish and a handful of freshly grated Parmesan as well........

Agreed. Seasoning is the key. Needs more than you'd think.

Steak Mince
Finely diced red onion (or spring onion)
Finley chopped red chilli and garlic
Smoked Paprika
Cayenne Pepper
Dash of tobasco
Tomato Ketchup
Salt and Pepper

Either on it's own or stuffed with mozzarella!

just mince, nothing else

it's much worse when you put in bread/eggs

chilli and coriander sounds good though, I will try that

Lamb mince, kofte spice (I buy a big tub of it in Turkey every year), finely chopped onions, even finer chopped garlic, lots of pepper, salt and very finely chopped red chilli.
Mix and chill in a bowl, make into patties and George Foreman with a few sprigs of rosemary on the grill.
Superb everytime.
