applying for grad jobs as a non-recent graduate

i've identified a couple of graduate schemes that i like the look of and am taking the weekend to tailor my CV towards them.
i was just wondering if anyone here has done this in the past as i'm not sure how to pitch it. do i focus on the specialised experience i have in order to push my engineering skills or try and cover as many of the softer bases as possible that HR look for in graduates?
it it helps, its been 5 years since i graduated. one scheme is engineering based, the other a commercial role that i would happily lop a limb off to obtain. i want to demonstrate that the drop in salary and position does not bother me without coming across as being too desperate.

Im involved in the grad recruitment where I work. We've taken on people with 2/3/4 years experience. Generally we just approach it in exactly the same way. It should be an advantage to you because your experience should help you in the interview.
One thing I should point out though is that we say people must have graduated in the last 5 years, therefore id check if the scheme has a similar rule, otherwise you'll not get past the initial CV check.

thanks. its the CV 'cull' i'm worried about really as i know our HR dept. don;t look at anyone with 3+ years experience.
the scheme i'm really interested in is purely electronic based application, with no contact numbers at all for any of their offices. as a recruiter, how would you feel if you were running such a process and someone found out your number and cold called?
