Thinking of cooking the above recipe for Valentine's Day but don't have a clue what to srve it with carb-wise. Potatoes of some sort? But nothing rich because of the stuffing. Any suggestions?

I'd go for mustard mash (to go with the cheese). And then, you'll want something green to balance the plate- steamed greens would add some fluid (as there is no sauce on the chicken).

Something wet, as I bet it can be quite a dry dish, not being a mash fan,
I would go for a dauphinoise or as above a crushed new potato/leek combo

The richness of the cheese and the saltiness of the cheese and prosciutto together need offsetting otherwise it'll be sickly, so maybe griddled asparagus (bit of crunch as well).

I'd probably concur with MissDiane on the dauphinoise, or maybe boulangere to reduce the richness.

Or have a starchy starter (wild mushroom or butternut risotto - maybe still a bit rich?) and just a citrussy dressed salad with the chicken.

Slightly off the wall suggestion but why not serve it with penne with pesto and some roasted baby tomatoes?

Rosemary fried new potatoes - wash and halve them, part-boil, drain and pat dry. Heat a decent amount of olive oil in a frying pan, add a handful of cloves of garlic (crushed-with-skin-on so they're still whole but broken inside), and a generous amount of rosemary (fresh or dried). Add-in the potatoes, pan-fry until nearly crisp. Add-in some butter, then finish frying in the butter to give them a nice glaze. Taste gorgeous, and really simple to do!

Like the asparagus suggestion (but don't overdo!), probably add something else 'crunchy' such as sugar-snap peas.

Finely sliced leeks, sauted in butter and finished with a drop of dry white.
Glazed baby carrots.

Cheers guys - think I'll go with one of the new potato ideas with a little bit of dressed salad on the side! I'll let you know how it goes.

Also those boulangere potatoes sound nicer than dauphinoise, I'll give them a try one day soon!
