Cut the head off turn sprat on it's belly press down along the top of the back of the fish as if trying to flatten it. Turn the sprat over and remove the backbone from inside the belly cavity.
Lightly dust with flower and shallow fry or grill as desired, place on toast and virtually no bones to mention.
Same trick works with its bigger brother the herring too.

That's the one! Did the same technique with some fresh mackerel tonight; you do still end up with some small bones, but not many.Lightly dust with flower and shallow fry or grill as desired, place on toast and virtually no bones to mention.
