I've driven round Skye and its pretty but I'd recommend Mull over it any day of the week. Mull still has that "unmolested by tourist cack" feel to it and has some cool roads & stunning views to romp around on.
Big warning ! Fuel up to the brim on the mainland, the price of petrol is extortionate on Mull and Skye is no better.
I paid 1.36/ltr for unleaded back in September 2005, made my eyes water I tell thee!

I was up there in early January & fuel was pretty much about the same price as anywhere else really. Not many fuel stations so fill up when you do see one.
It was the first time I'd been to Skye & I thought it was ok - not great but ok. Most places were shut until Easter & the beaches are rubbish (I have a dog that loves beaches). The main road to Portree is in shocking condition in places - if I was a biker I would be seriously avoiding the place because of this. I'm glad I've been but I won't rush back.
Now if it's good & empty driving roads you're after, head from Inverness over to Ullapool then carry on up to the North coast. Beaches are amongst the best in the world as well!
